Upma With a Twist

Fresh corn upma is filling and so refreshing.....read on for this simple yet delicious and quick recipe:-

2 cup Corn fresh
2 tsp Oil
1 Onion chopped
2-3 Green chillies chopped
1/4 tsp Mustard seeds
1/4 tsp Turmeric powder 
1/4 tsp Asafoetida
Fresh coriander leaves chopped
1/4 cup Fresh Coconut (optional) 
Few drops Lemon juice
Salt & sugar to taste

1. Heat oil and add mustard seeds let them splutter, add green chillies, onions and saute till onion get light brown color. 
2. Add turmeric powder, asafoetida, corn , salt, coconut(optioal) and mix well. Add little water so that corn is cooked. 
3. Cook for 5-7 minutes or till all the water is evaporated and corn is well cooked. Add lemon juice and mix well.
4. Garnish with coriander leaves, coconut. Serve hot.

तिळगुळ घ्या गोड बोला


In Maharashtra on the Makar Sankranti day people exchange multi-colored tilguls made from til (sesame seeds) and sugar and til-laddus made from til and jaggery. Gul-polis(jaggery stuffed flat bread) are offered for lunch. While exchanging tilguls as tokens of goodwill people greet each other saying – ‘til-gul ghya, god god bola’ meaning ‘accept these tilguls and speak sweet words’. The under-lying thought in the exchange of tilguls is to forget the past ill-feelings and hostilities and resolve to speak sweetly and remain friends. So lets get started with the recipe:-

1 cup Dark Jaggery (Chikkicha Gul)...I didnt have any so I used the normal jaggery instead; it works but you cannot get the desired colour.
3/4 cup Sesame seeds ( Roasted)
1/4 cup Roasted crushed peanuts
Pinch of Cardamom powder and Nutmeg powder each
1 tsp Water
2 tsp. Ghee

1. In a microwave safe bowl add tsp.of ghee, jaggery and microwave for 2 minutes stirring after every one minute. (Microwave setting for each microwave differs, so try to cook it accordingly.)
2. Remove it and add cardamom powder, nutmeg powder and a teaspoon of water in melted jaggery, stir well. Add crushed peanuts, roasted sesame seeds and mix well.
3. Now grease the tray or a plate with the remaining ghee and spread this mixture evenly by using any bowl, spatula. Make sure if you are using a bowl; grease the bowl as well to avoid sticking the mixture to the bowl.
4. Make marking using knife and let it to rest for 30 minutes.


5. Now separate tilgul vadis and serve.

Butter Chicken/ Murg Makhani


The weather sucks out here in Gothenburg.......I mean how can there be heavy snow fall one day with chilling winds one day, rains the next day and rising temperatures to follow! ...and the cycle repeats itself....There has to be some consistency somewhere!!
Anyway but even in this ridiculous weather the prospect of eating butter chicken that day, even if it meant hours of preparation and cooking made me extremely happy. Let me tell you its pretty simple to make butter chicken at home if you have all the right ingredients on hand and are ready to spend hours in the kitchen. Lets just start of with the longggggggg ingredient list...

Here it goes:-

      For the Gravy                                                    For Marination

    * 4 Tomatoes roughly chopped(Nice Red)               300gms. Chicken Breast
    * 1 tbsp Oil                                                         1/2 tbsp Red Chilli powder
    * 1 tsp Cumin Seeds                                             1/2 tsp Garam Masala
    * 1 tbsp Coriander Seeds                                      1 tsp Coriander powder
    * 1 tsp Fennel Seeds                                             2 tbsp thick Yogurt
    * 1 Bay Leaf                                                        1 tsp Cumin powder
    * 3-4 Green Cardamom                                         1/2 tsp Kasoori methi
    * 3-4 Black Peppercorns                                        1 tbsp Lemon juice
    * 3-4 Cloves                                                         1/2 tsp Salt
    * 3 tbsp Butter
    * 1 1/2 tsp Kasoori Methi
    * 1 tbsp Sugar and/or honey ( I added both)
    * 1 tbsp Ginger Garlic paste
    * 1 tsp Red Chilli powder
    * 1/3 cup Cream
    * Salt to taste
   

For Chicken Marination:
1. Preheat the oven on 200 0 C. Take chicken breast, cut in thin strips, wash well and pat dry using paper towel or napkin.
2.  Mix in red chilli powder, garam masala, coriander powder, cumin powder, salt, kasoori methi, add some lemon juice, yogurt, in a deep bowl.
3. Add chicken pieces, mix well with marinade, cover and keep it covered for 1 hour.


4. After one hour transfer marinated chicken in greased baking tray, drizzle some oil over it and bake for 15 to 20 minutes on 200 0 C.





For Masala:
1. Heat up oil a tbsp oil, add cumin seeds, whole garam spices, coriander seeds and cook till nice aroma come out from spices and they change its color.



2. Add ginger-garlic paste. Add fenel seeds, mix and cook for a minute.
3. Add tomatoes, sprinkle some salt, mix, cover and cook for 5 to 7 mins. This way you will be able to maintain the nice red colour that you require for the gravy instead of adding artificial food colour.
4. Once the tomatoes get cooked remove it from fire and let it cool down. 


5. Grind the mixture well to make a very smooth puree.
 
For Gravy:
1. Heat up 3 tbsp butter, add ground masala paste straining (to remove the skin and seeds of tomatoes) it directly into the butter, red chilli powder and cook till oil starts to separate from spices.


2. Add baked chicken pieces along with its juices, kasoori  methi, cover and cook for 5-8 mins on medium heat.
3. Check for the salt. Add sugar and/or honey. Mix it well. Add fresh cream and mix well.
4. Serve hot garnished with fresh cream.

Its been a while since I......

I hate my blog these days so it has been deprived of updates...What's worse, I don't feel like updating it often enough! There are things about which I want to write but can't bring myself to! for whatever reasons.....
Its been a while since I......
        wrote a blog post!
        have read other blogs and have commented on them for their good work!
        read my own posts for that matter!
        have participated in any blog events!
        was genuinly happy for a looong loong stretch of time!
        relaxed completely and peacefully looked at years to come without a trace of anxiety!
        faced myself boldly, accepted facts and sought answers!
        did something nice for someone without expecting anything in return!
        felt positive about certain things!
        have gone for swimming!
 and I feel ridiculous about not being enthusiastic about all these small little things in life...............so now I shall get to doing just that! :)

So to start with....I know its tooooo late....but they say...its better late than never....so....

Now let me begin with my recipe. Its Cheese and Potato Tikki.... I got an idea from one of the very popular comedy shows Sarabhai vs. Sarabhai..where Indravadan asks Maya to serve him Aloo cheese ki tikki; and thats when I thought lets just make it. so here goes the recipe:-

Boiled potatoes Medium 2-3
Grated Cheese 200 gms.
One medium size Onion fine chopped
Garlic cloves 2-3 fine chopped
Fresh Coriander leaves fine chopped
Salt to taste
White pepper powder 1 tsp.
Oil to shallow fry
Fresh Bread Crumbs 
 
1. Mash the potatoes nicely and add the fresh bread crumbs ( for fresh bread crumbs just coarsly grind 2-3 bread slices). 
2. Add salt, chopped onion, garlic, chopped coriander leaves, and white pepper powder.  
3. Make medium size balls and stuff grated cheese in the potato ball. Make sure that cheese does not come out from the covering. 


4. Heat oil and shallow fry the tikkis from both sides till they get golden brown colour. 


Serve when they're sizzling hot along with Ketch-up.

A Perfect Breakfast but a not so Perfect Day

Making an absolutely fresh beginning, starting off with a clean slate is amazingly simple. But it surprises me how difficult it is to take up again, what you had started a while ago, especially when snow is creating a havoc all over Europe! Its tough to get back to what you once were!

At the news first; I was very excited to shift to another country...another city ......... Already 2 weeks in this Metro city; Gothenburg in Sweden and still not able to settle down here. Highly disappointed at the first impression of this city....but may be I should blame the weather out here as the city is completely blanketed under heavy snow. Visiting Nordstan (one of the largest shopping mall in Scandinavia..... :-( or at least what they say) does not excite me and I bring myself to comparing it to My Zeil ( Shopping Mall in Frankfurt) , I keep saying it is the biggest. 

A little over one and half years back when I got out of the aircraft and collected my bags at the Frankfurt International Airport, I had no clue its going to be so tough bidding goodbye to this city (Russelsheim near Frankfurt; where I lived). I still remember the not very impressive  view of Russelsheim as we approached from the airport but felt at home immediately after a day or two. The same view today makes me feel completely at home (now when I go through the old pics), its almost queer how I could get used to anything in such a short span.

Maybe everyone has to go through something like that once in their lives and maybe its all for the good.......... the only thing I knew then,  its sure going to be tough ........for more reasons than one.......the final ride to the airport on Dec. 4th!

Anyway, Now that I have blurted out everything here ( and I feel lighter)...Let me begin with the perfect yet simple breakfast recipe............Corn and Spinach Sandwich.....so read on.....

Bread (of your choice White / Brown), Butter, Salt & Pepper, Cheese (Slice/ Grated), Bolied potato, Spinach leaves shredded, Boiled corn, Finely chooped onion is all that you need....

1. Mix in boiled and mashed potato, corn and spinach leaves. Add salt and pepper.
2. Now heat a tsp. of butter and saute onion till translucent. ( I like onion in this mixture; you can skip it if you want)
3. Once the onion becomes translucent, add the spinach and corn mixture and give it a stir for 2-3 mins. Remove.
4. Apply butter on the bread and on one slice apply this mixture pressing it so that it does not spill out from the bread.


5. Place cheese slice/ grated cheese on to it and cover it with another buttered bread.


6. Grill it nicely till the skin becomes golden brown and serve hot.

Back with Vegetable Manchurian

A big hello to everyone! I am back on the bloggo-sphere and I missed you all very much. I had been checking all your blogs for lovely and lip-smacking posts all this while but could not post anything on the blog. I am still in the settling stage right now so may not be able to be as active; as I was earlier for some more time but still would be posting some recipes that I have clicked.

Before I begin I would like to thank Aipi and Akila for sharing the Participation card and an award respectively. Check out the lovely round-up they have posted on their blogs for their events; the links are as follows-



and now coming back to my Manchurian post......lets take a look at what all goes in it........

Cabbage leaves 2 cups
Carrots 2
Ginger-Garlic,finely chopped 1 tbsp
Green capsicum 1 medium
Salt to taste
Refined flour 1/4 cup
Cornflour 1/4 cup
Oil to deep fry

For Sauce:-
Oil 2 tablespoons
Ginger-Garlic,finely chopped 1 tbsp
Green chillies, finely chopped 3
Onion finely chopped 1 medium
Spring onions with greens, finely chopped 1/2 cup
Soy sauce 2 tablespoons
Sugar 1 teaspoon
Salt to taste
Vegetable stock/Water 2 1/2 cups
Cornflour 3 tablespoons
Vinegar 1 tablespoon

For Manchurian Balls:-
1. Reserve spring onion greens for garnish.
2. Roughly churn cabbage, carrot and green capsicum in a blender; do not make into a fine paste.
3. Remove it in a microwave bowl; add salt. Microwave it for 10 mins mixing after every 2-3 mins.
4. Let it cool down completely and then add ginger-garlic, corn flour, all purpose flour, soya sauce. Adjust salt and mix everything.

6.Shape into lemon sized balls.

7. Heat sufficient oil and deep-fry vegetable balls in small batches for three to four minutes on medium heat or until golden brown. Drain on absorbent paper.


For Sauce:-
1. Mix three tablespoons of cornflour in one cup of water.
2. Heat two tablespoons of oil and stir fry the ginger-garlic half a minute.
3. Add the onion, green chillies and stir-fry for half a minute more. Add soy sauce, sugar and salt.
4. Stir in vegetable stock/water and bring to a boil. Stir in cornflour mixture and cook for a couple of minutes or until the sauce starts to thicken, stirring continuously. Switch off the gas.

5. Add the fried vegetable balls and mix well. keep it covered for about 15 mins so that the balls will absorb the sauce.
6. Serve hot, garnished with the reserved spring onion greens.
